I think white would look good. It will accent the truck nicely. Too much white gets really dirty, but if you just do the bezel and vents it's shouldn't be too bad at all. Do you plan on sanding the texture off the dash bezel or just leaving it? Make sure you clean the pieces really well with rubbing alcohol, otherwise the paint won't stick.
I just painted my vents, door handle cups, and the panel for windows/locks a while ago. I just got done sanding my dash bezel last night and primed it today. In my opinion, sanding the texture off is the way to go for interior painting. Show some pics of your progress. Good luck on the project.
