I've got an extra NX wet kit (#20920) laying around and was thinking about throwing it on the S-10 for the hell of it. How big of a shot will she take?

75 wet kit, might be alright if you swapped to some colder plugs....but I bet she could stand a 50 or 65 shot no problem

NOS recomends that you run 1/2 of what your stock hp rating is. So , if yor motor is rated at 100hp. Then 5hp would be the max.

the one ive always gone by was the 15-20hp per cylinder for stock

Pretty close in this case. 120/2=60hp and 15*4=60
