I have a few questions,,Here they go--
-Why should i run check valves? And if i do, How many of them do i have to run?
-How about water/oil separators? I dont have a problem draining my tank, And i will not drive my truck in the winter..
-I plan on running a Viar 380 and 5 gal tank, What should i expect for play times?
-I am going to run Airlift sleeve bags in the rear, How do i set them up?

Check valves...At least 1 off the compressor. You could also run a check valve before each of your fills to prevent loss of back pressure.

Water/oil seperators?? You mean water trap. It's recommended. Moisture is going to collect. Higher humid areas will collect more.

Play times - Not much play time at all.

Sleeve bags need to be run with a shock limited set up to prevent the bag from becoming over extended.
