I am looking at 18x8's with 215/35/18 tires but they have a 5x4.5 lug pattern with a +40 offset. I don't completely understand what offset refers to if someone could help me and will it be hard for me to find adapters for this and with the adapters will they still work with a 3/4 or 4/5 drop?

Offset is the measurement of the mounting surface in relation to the center line of the wheel. If the offset is +(plus) then the mounting surface is more towards the road side of the wheel, -(negative) offset means the mounting surface is more towards the vehicle side of the wheel. You will be fine with a GOOD set of adapters.
