Replaced the intake manifold and distributor with what? The distributor drives the oil pump. There is a flat spine on the bottom of the distributor that has to align with the oil pump. If your distributor isn't installed all the way down so that the spine fits in the shaft up from the oil pump you'll have zero oil pressure.
If you don't get it fully seated, it will start, run (badly because it is out of time) but no oil pressure if not fully seated.

The distributor is fully seated and the oil pump is engaged. It's getting about 15 psi of oil pressure ,but it sounds like it's knocking

The only thing that could affect oil PSI is the oil filter.
Id change it just for peace of mind.
If you have the dist in worng it wouldnt run.
there is zero anything else you did that would cause oil psi problems.....DID YOU leave a rag in the intake valley?

Wandering Oil Pressure ? I'd run a quality mech gage to verify before

Actually, there are several other possibilities; one example could be improper bearing clearances. But, based on what the OP has stated so far, I'd suspect something else before that.

true, but, he R&I the intake, which wouldnt effect the oil psi at all.
He did an oil change, so in THIS scenario, the oil filter is the only thing which could effect the oil pressure.

As a GM tech , I picked up 2 pristine 454 blocks from metal discard bin , warranted for Main brng knock. Actual cause was defective mech fuel pumps ! Thanks to 'jump to conclusions

What you're hearing could be pre-ignition. Double check the routing of your spark plug wires. Not rare for folks to cross #1 & #3 due to the fact they are the only two where the distributor layout doesn't match the cylinder layout. I've heard of times where engine won't startor will start and run badly...though I've never heard one way or another how the oil pressure was effected.

I had trouble a few years ago with the oil cooler causing low oil pressure. I removed it and put the oil filter directly on the engine. I gained about 10 PSI.
A possibility here is the oil cooler itself expanding under pressure, thereby acting as a sort of pulse damper. Think : old or damaged brake flex hoses that then expand , reducing brake line pressures and brake efficiency.
