What I'm doing is two fold: I'm putting a Pioneer head unit in my 2000 then taking my stock head unit and putting it in my girlfriend's 96 Cavi. I was flipping through the Haynes manual for her car and it said to disable the air bag because it could go off while I'm messing with the radio...but it also said to disable it for anything I do around the dash. Is this a real danger? If so, do I need to worry about disabling my S10's air bag?

No you just have to be careful, when pulling off the top of the dash there is a metal bar goes under the passenger airbag if your not careful you can puncture it. But it makes you feel safer just disconnect the battery also.

just disconnect the battery and you'll be fine.
